Not Your Momma's Meatloaf

This recipe is inspired by PaleOMG’s blog. We’ve been making this for years and it still doesn’t get old. What I love about this recipe is that it’s savory - between the smoky bacon, to sweet potato and cinnamon, it warms up your belly in such a satisfying way!

Ingredients

2-2.5 lbs of ground beef

4-5 slices of bacon

1 small sweet potato, shredded

1 onion, diced

2 eggs

1/c cup raisins

1/2 tbsp cinnamon

1 tsp garlic powder

1 tsp onion powder


Directions

  1. Preheat oven to 400 degrees. Shred your sweet potato in advance.

  2. Chop bacon into chunks and place in a large saute pan. Begin to fry bacon, and add raisins and onions. Once the raisins are plump, turn off heat and cool.

  3. In a mixing bowl, combine the ground beef, shredded sweat potato, spices and eggs. Mix well.

  4. Once the bacon mixture has cooled, add to the beef mixture, and mix again to combine well.

  5. Bake meatloaf in 2 standard sized bread pans for 45 mins.
