Breakfast Hash

This breakfast hash is one of my favorite meal prep recipes! In less than an hour, you’ve got several meals of this satisfying, protein packed dish for the week ahead! I eat this as breakfast, lunch and sometimes even dinner!



Ingredients:

1 lb of sausage (I use our beef breakfast sausage from the farm, but any loose pork or beef breakfast sausage will do the trick)

1 onion, diced

1 medium sweet potato, diced

1 can of fire roasted diced tomatoes (8 oz)

2-4 eggs (optional for topping)



Directions:

  1. Pre-heat your oven to 400. Prepare meal in a cast iron pan that can go from stovetop to oven.

  2. Saute onion and sweet potato.

  3. Once onion and potato begin to soften, add your sausage to brown.

  4. Then add your tomatoes and stir together - spread the mixture evenly across the pan.

  5. If you’re adding eggs, crack the eggs on top of the hash. You can use your spoon to make a small indentation for the egg to sit.

  6. Transfer your pan to the oven. Bake for 25 mins (test by checking to make sure the potatoes are soft).
